  1. I have cooked this using a mud pot.So first i have added 2 tsp of oil and then kept it on flame.As oil gets heated , add mustard seeds, as they crackle add the cumin , methi seeds, urad and channa dals.Now add green chillies and curry leaves to the seasoning.
  2. As they turn golden brown , add onions and ginger. Saute for some time till onions become translucent.
  3. Now we add bottle gourd pieces , a tsp salt , turmeric ,tamrind pulp and sprinkle little water and cover it with a lid.
  4. After 5 minutes , give a gentle mix and cover it again. Check for tenderness of bottle gourd pieces.Once they become add 2 cups of water.
  5. You can check for taste and adjust anything if required. Adding a little jaggery adds to taste but its your personal choice.Add additional water if required
  6. Now let it cook in slow flame for 15 minutes and the switch off the flame.
  7. Now the stew is ready to served.Rice is ideal combination for this anapakaya pulusu. As resting time increases taste is awesome for all kind of south indian stews.
