Brinjal also known as eggplant has been quite famous in south India for preparing the famous curry gutti vankaya but very few people know about this chutney. Cucumber is very good for health as it helps in keeping body hydrated.So the combination of both tastes fantastic as well as it is healthy.

There are few varieties of cucumber and brinjal but only few suit to this chutney preparation. Long green brinjals are ideal , madras cucumber or nakka dosakaya as known to telugu people is to be considered for cucumber variety.

  1. Cut brinjal into medium sized pieces

  2. Take a small sized Madras cucumber, peel the skin and cut into small pieces..

  3. Take a kadai and add the brinjal pieces, tamarind, green chillies to it. Add 1 tsp of salt and let it cook till colour of brinjal changes and it becomes soft.

  4. Keep the cooked brinjal aside and let it cool down.

  5. Add them to a mixie jar and also add half cup of cucumber pieces to it.Grind it to coarse paste.

  6. Take a pan and add oil to it for tempering. Add mustard seeds, once it crackles add the channa dal, cumin seeds, urad dal, curry leaves, red chillies, garlic cloves.

  7. After the tempering gets ready add coarsely grounded brinjal and rest of cucumber pieces to it.

  8. The chutney is ready to be served. It is tasty with the combination of rice as well as chapathi.
