Carrot corn rice is a nutritious and tasty recipe. Kids love it the most as it has very mild masala and crunchy taste, also includes more vegetables that are good for them. Left over rice can also be used, you can always alter vegetables and spices according to your personal choice.

Rice Used

Either left over or freshly cooked and cooled rice can be used. Basmathi can also be used.

Variations

Many other vegetables can be added for different variations. Too keep it simple and tasty i restricted the veggies. Not much of masala or spices is required. Fresh sweet corn is preferred over frozen one. Green peas can also be added.

Served Best With

Raita is idle for kids, Can be eaten with tomato sauce or any spicy chutney on side. Papads do add on to the taste.

  1. Take a Kadai, Add 2 Tbsp oil. Once it gets heated, add onions. As they turn golden brown, add rest of the vegetables.

  2. Saute for 3-4 minutes. Add soya sauce , salt ,jeera powder and garam masala to it. Mix it lightly and add cooked rice to it.

  3. Mix it and check for salt and spice. If needed adjust accordingly. Saute for five minutes.

  4. Switch off the flame, Carrot corn rice is ready to be served.
