      Ingredients

      Instructions
      1. Soak three cups of rice in water for 15 minutes.
      2. Grind 1 onion, 1 tomato and 5-6 cashews together into fine paste.
      3. Heat oil and ghee in a pressure cooker. Then add the remaining cashews and fry them till they turn into golden brown colour. Remove them from the pressure cooker and keep them aside.
      4. Add the spices – bay leaves, cardamon, cinnamon, cloves, mace and star anise and fry them for 30 seconds.
      5. Add sliced onions to this and saute it till the onions turn golden brown over low heat.
      6. Add the slit green chillies to this.
      7. Add ginger garlic paste and saute it for about a minute.
      8. Now add the sliced tomatoes and salt and let it cook for 2-3 minutes.
      9. After the tomatoes are cooked add red chilli powder(you can add more red chilli powder if you want it little spicy)
      10. Add garam masala to this.
      11. Drain the rice and add it to this mixture and fry it for a minute or two.
      12. Add water and stir it well on high flame. When it starts boiling cover the lid of the pressure cooker, timing it to 3 whistles, before turning off the flame.
      13. Let the pressure settle down.
      14. Serve the Kaju Tomato Biryani with raita, curry or salad.
