Lemon Semiya

Lemon Semiya is a lip smacking recipe , can be made in short time of 15 minutes for 2 servings. Tangy, spicy and nutty flavoured vermicelli is a breakfast treat. It is similar in preparation to lemon rice but has unique taste.

Procedure

Boil and drain excess water from semiya, this is  a crucial point. Once you get it right, hardly it takes 10 minutes to prepare the rest. Vermicelli is used to prepare many dishes. Nutrition value is high as many nuts are added. Follow similar method for cooking raw vermicelli and also can be seasoned , further adding curd makes it different dish.

Tips

1)Do not overcook

2)Over mixing causes mushiness.

      1. Take a vessel and add water to it (around 5 cups) , when it comes to rolling boil add 2 tsp salt and oil in it.

      2. Add semiya and stir occasionally. Once it is cooked , switch off the flame. Be sure it is not over done, it should be only 3/4th cooked.

      3. Now strain it using a colander and keep it under running water and drain the excess.

      4. Take it into a wide plate and let it cool down.

      5. Meanwhile prepare the seasoning. Take a kadhai, add some oil and mustard seeds.Once they start spluttering add remaining seasonings , groundnuts, green chillies. Once they get roasted ,put some curry leaves and switch off the flame.

      6. Add salt, turmeric powder, lemon juice to the cooked semiya. To avoid stickiness , we also add 2 tsp oil or more if required.

      7. Mix thoroughly with a laddle and keep it aside for 10 minutes and then serve it.This time is used in inducing the flavours to the semiya

      8. Mouth watering semiya is ready to be served.It can be prepared for evening snacks too.

      Recipe Notes

      1)Salt and spices can be adjusted accordingly if required.

      2)To avoid mushiness , do not over mix semiya after cooking.
